Banana Cream Pie

There’s something timeless about banana cream pie. With a flaky crust, velvety, creamy custard, and sweet ripe bananas, it strikes the perfect balance between indulgent and comforting. This is one of my boyfriend’s absolute favorite desserts (which is saying a lot, because he isn’t a dessert person!). Whether you’re looking for a nostalgic treat or an impressive dessert to bring to a gathering, this pie never disappoints.


Ingredients:

  • 1 prepared pie crust (I like Pillsbury brand)

  • 6 tablespoons sugar, divided, 3 tablespoons each

  • 6 tablespoons flour

  • 1/4 teaspoon salt

  • 2 cups whole milk

  • 2 egg yolks, beaten (save whites in a clean bowl)

  • 1 1/2 teaspoon pure vanilla extract

  • 1 tablespoon butter

  • 3 ripe bananas, sliced

  • 1 pint heavy whipping cream, sweetened as desired

Instructions:

  1. In a mixing bowl, whisk together the first three ingredients: 3 tablespoons of the sugar, flour, and salt.

  2. Pour the milk into a medium saucepan and place it over medium heat.

  3. Immediately add the sugar-flour mixture to the milk and stir constantly until the mixture thickens, about 810 minutes. It should be thick and smooth.

  4. Add the egg yolks to the thickened mixture and continue stirring for a few more minutes.

  5. Stir in the butter and vanilla until fully combined.

  6. In a separate bowl, beat the egg whites with the remaining 3 tablespoons of sugar until stiff peaks form (do not overbeat into meringue).

  7. Gently fold the beaten egg whites into the hot custard mixture until fully combined.

  8. Arrange sliced bananas on the bottom of the prepared pie crust.

  9. Pour the custard over the bananas, spreading it evenly to fully cover them.

  10. Loosely cover the pie with plastic wrap and refrigerate for at least 2 hours, or up to 2 days (note: the crust may lose freshness after the second day).

  11. Before serving, top the pie with generous mounds of freshly whipped cream. Enjoy!
